HEY guys,
i was thinking of making shortbreads for a long time. even i had considered making it soo many times, but somehow it didn't happen. but today i finally made it. the main reason is that i wanted to munch something(thats my bad habit!!!!!! to keep on munching).and this is gr8 for that purpose. trust me!!! itzz crunchy.... yummy... and healthy.... what else can one ask for?? moreover, it is easy, tremendously easy. and the best part was i had used the traditional method. while rolling out the dough. i had rolled it with a glass bottle, instead of a rolling on. that imparts the perfect thickness to the shortbreads. well i have used different shaped cookie cutters for the shape. you can always stick to one shape. Ur wish...
here goes the recipe... well i had taken the recipe from the "passion for baking" website....


Ingredients:
  1. Butter – 1/2 cup (room temperature)
  2. Castor Sugar – 5 tbsps
  3. Finely grated rind of 2 limes
  4. Juice of 1 lime
  5. Flour – 1 1/2 cups
  6. Lemon Sugar for sprinkling (or extra castor sugar)

Method:
§  Preheat the oven to 190 degrees C. Grease 2 baking sheets.
§  Beat the butter & sugar till creamy & soft.I do this by hand.
§  Beat in the lime juice & rind (I do this too by hand & don’t use the mixer at all for this recipe).
§  Gradually add the flour and gently pull the dough in together to form a soft ball.(i had mixed a bit of baking soda & baking powder to the flour before passing it through the sieve).
§  Roll out on a lightly floured suface to about 1/2 ” thickness ( for sandwich cookies I roll to a 1/4 ” thickness). 
§  Put on the baking sheet,sprinkle with lemon or castor sugar, & bake for about 20 minutes till golden brown.
§  Remove to a cookie rack to cool.
§  Makes about 2-3 dozen.

well, now my additions. i always make additions to recipes and make it my own. so while baking them i had put in 1 drop of lemon essence,to make the flavor prominent becoz to me, the lime essence & taste is very refreshing. you can also replace the lime with orange. i had also added a bit of freshly grated nutmeg powder while making the dough. 
caution: please sprinkle enough flour before rolling out the dough. it will be helpful. i put in jam on top of one shortbread and top it with another shortbread. ready ur sandwich shortbread.
