hey frnds,m back. its d last day of this month. i was wondering, how quickly, time passed by. but probably, because it passes away, we get to understand its worth. but i did not waste much of my time this month. the blog is an evidence, that i had spent most of my time, earnestly in studying about food and searching for recipes. and here i am with the last cookies recipe for this month.

INGREDIANTS:
butter(salted/unsalted)- 1/2 cup
oats- 1/2 cup
flour 3/4 cup
caster sugar 3/4 cup
baking soda 1/4tsp
raisins(chopped) 1/4 cup
cinnamon powder 1/2tsp
lime zest 1tsp
honey 1tbsp
milk 2tbsp

method:
·                     preheat ur oven @ 180degree for 15mins.

·                     cut an alumium foil or baking sheet in the size of your baking dish. grease it well.

·                     mix flour,soda, cinnamon powder in a bowl. and keep aside.

·                     take another bowl. with a beater, mix butter and sugar, till they attain a creamy consistency. u can either use ur hand or an electronic beater.

·                     now add the flour mixture in this beaten creamy butter-sugar mixture.

·                     add the lime zest, oatmeal, chopped raisin,honey and mix well again. be very careful about folding in all this dry ingradients properly.

·                     now add the milk also. try anduse cold milk for better results. but at this stage, do not play with it much.

·                     allow it to set for some time. may be 10 min.

·                     now with the help of a spoon place the mixture in the greased baking dish. make a few holes with the help of fork on the surface.

·                     now place them in the pre-heated oven. and bake them for about 10-15mins, in 180degree centigrade.

well, as i always say, i made certain changes. i made the entire dough this time with my hand,. because the warmth of the hand helps to keep the butter liquid to some extyent. i had also added a bit more of milk, because i thought the mixture ws too dry. and then the if you want, after the mixture has set, with the help of a rolling pin, spread them. and cut it with your cookie cutter in desired shape. and remember to turn over the cookies once. intially when mine came out they were like very soft. but as you keep them aside for sometime, you notice that they have hardened. another problem was the honey. i somehow. dont like thje flavour of warm honey which was pretty much ther.. you get the taste of that honey also. if any of you have a problem with that, then you can decrease the quantity of honey in it. and i also added a pinch of salt, since i used an unsalted butter. but if you are using a salted one, no need of the salt then.

and lastly, this are for those friends of mine who are completly vegetarian. i was soo happy to treat those friends even with one of my cookies.

B@sic Cupc@kes



Cupcakes has been an eternal favorite of mine, ever since i had tried them for the first time years back. they have been associated with soo many memorable moments of my life. like celebrating my puppies birthday, my sisters doll,s birthday, giving treats to friends @ the end of the month, and at times my staple in the tiffin box during my school days. and so was my love, that i had decided to make it myself, with ingredients of my choice and definitely depending on my mood. well,after a couple of not so succesful attempts i finally succeded in making my first batch of cupcakes. though they are basic cupcakes, yet i had put in some flavours of my choice. and the first batch was normal cupcakes, and for the second batch i had mixed in some cocoa powder with the cupcake mixture. and the bestest part of this recipe is that itzz damn easy and you can make the entire mixture in just 10 minutes. no need of making dough, no need of slogging your ass off on this, itzz simple, yet delicious and trust me, can work as one of the best gift for your loved ones.
i made the dough in my mixer grinder. well, if you want you can add in some other ingrediants of your choice also. i had not used any kind of frosting. but itzz upto you, to decide. as for me, i was in too much hurry to taste them. may be my next batch will have sum kind of frosting. but as of now, for all those amateur (cupcake) cooks,hers the recipe of basic cupcakes.

INGREDIANTS:

  1. 125gm butter
  2. 125gm sugar (castor sugar)
  3. 1+1/2 tsp baking powder
  4. 1tsp baking soda
  5. 2nos eggs
  6. 1/2 cup milk
  7. 1tsp vanilla extract


METHOD:

  1. preheat your oven @ 200degree C.
  2. beat the eggs well
  3. grease your muffin mould and use paper racks
  4. put in all the ingredients in the mixer-grinder and mix well..
  5. then put in 1tbsp of the mixture in each cup and bake them for around 15-20mins @200degree.
  6. cool and serve. if u want to add frosting add when ur cupcakes have cooled down completely.
well, for my part, i have put in some dried apricots, cherries, cashewnuts as well. for you it depends.

hello,guys!!!!

feeling so prouud of myself. that alsofor the first time in my entire life.m finally done with baking a bunch of cookies for myself. ok, ok. wll share it with u people also.was so nervous last night while making them. even i could hear the thumping of my heart before putting those lovely babys inside the pre-heated oven. but finally i did. and after those 20 min wait, came out my lovely golden brown babies. my coffee cookies. but while making cookies, i also had a plan. make these cookies and use them as christmas gifts for ur near & dear ones. they are cheap and yummy. and what i always belive is that you really need to tamper a bit (in certain receipe), so as to make it your own. like i didnt have an electronic beater, so managed with a manual one. moreover, since m deeoly in love with the coffee beans, and that cofee flavour so in place of 1, i had put in 1 & 1/2tbsp of coffee powder. well enough of my experience.... now itzz time for you to gan some..................

now m gonna give u d rceipe of this yummy cookies.

Ingrediants:
all purpose flour:1/3 cup
butter(liquified): 1/4 cup
powder brown sugar: 1/3 cup
dessicated coconut powder: 1/2 cup
coffee powder: 1 tbsp
vanilla essence: 1/2 tsp
egg: 1 nos
baking soda: 1/4 tsp
salt" pinch

method:

·                     mix flour, coffee powder & soda in a bowl. and keep aside
·                pre heat ur oven 
·                     in another bowl, mix liquified butter & powdered sugar. and mix them with the help of an electronic beater to get a cream like consistency. after that add in it vanilla essence and the egg and mix well.
·                     now put in the dry mixture(floiu-soda-coffee powder) in this egg mixture and mix slowly. fold in the entire mixture slowly.
·                     put in a greased aluminium foil on the baking tray and place ur cookie mixture at a diatnce of every 1". now in a pre-heated oven place ur cookie mixture @ 180degreee centigrade for 15-20 minutes.

and a little bit wait. then comes our yummy crispy babies!!!!!! njoy them hot. and give ur local confectioner a run for their money. and till i am back with sum more experience and cookies, guys...................... happy baking!!!!!!!!!!!!!!

BANANA l0@f



well guys, this was interesting. i have been thinking of making a loaf for long. and at last yesterday, i did it. a loaf with some leftover bananas. it was kind of easy. but also had more ingrediants than the cookies. i was so happy when the loaf puffed up in the oven, and got its shape. but i had not followed the recipe totally from the mag where it was published, in certain steps. 
this loaf is tasty (because i have tasted it before putting up the recipe) as well as healthy for everyone, especially kids. moms can even add some chocolate chips (i have added some, arnd one table spoon) to make it more attractive to their kids. well, here i am giving you the original recipe and after that i will tell u about the changes i made.

ingrediants:

·                     wholewheat flour 3/4 cup

·                     refined flour 3/4 cup

·                     vegetable oil 1 cup

·                     castor sugar 1 cup

·                     vanilla essence 1tsp

          eggs 3nos



·                     large banana 2nos

·                     cinnamon powder 1/2tsp
·                      
·                     mace powder 1/4tsp

·                     baking powder 2tsp

·                     baking soda 1/4tsp

·                     walnut pieces 3tbsp


method:

·                     preheat the oven @180degree for 15mins

·                     grease ur loaf tin with oil/butter.(i had used oil)

·                     now mix both the wholwwheat and the refined flours in a bowl, with the cinnamon-mace powder, baking powder & soda.mix it well and pass it through a sieve.

·                     in another bowl break the eggs and beat it well. keep aside.

·                     now in another vessel mash the bananas properly with ur hand or fork(i had used a fork). now pour in the sugar and the oil. mix well. the beating should give it a proper consistency.

·                     now add the essence and give it a stir.

·                     now pour in half of the flour mixture and half of the beaten egg mixture. beat well. continue stirring till it gets a good consistency

·                     now add the remaining flour and egg and mix well again. (we do it in halves so that it mixes well, and no lumps are formed).

·                     now add the walnut pieces. stir it lightly.

·                     now pour the mixture in the loaf tin. (i had put it in two turns. i have a 6.5" /2" tin. so i had to do it twice.)

·                     now bake it in the oven for 40 minutes @ 180 degrees.

·                     repeat the process if you have a second turn.

well, for this, i had made loads of changes. since i didnt have much of cinnamon and mace powder then, so i had put in a bit of cinnamon, star anise and green cardamom powder. next i had also added a bit of red chilli powder, to add a bit of heat in this sweet mass. well, i had also used a pineapple essence in place of vanilla. the amount of sugar was also reduced. i had also added cashew, raisin also in the mixture. with all these additions & subtractions my loaf was finally baked. and it was pretty good. i had baked it for a bit longer time to get that dark broen colour on the outside.

Stir fried n00dles with chicken



well, i have also been a gr8 lover of chinese cuisine. chinese food is something, probably every one is addicted to. it comes under the oriental cuisine. chinese cuisine has certainflavours, ingrediants which impart a different flavour to the dish. like seasme oil, is one of those important oils which is used for flavouring. even i like the oil so much. i was not well at all. but still, had a few guests. had a couple of ingrediants stocked up in freezer, with which i made this. trust me it was an instant heat.
INGREDIANTS:


for chicken marinade:

chicken 2breasts (*cut into 1/2" pieces)

red chillies 1tbsp

seasme oil: 1tbsp

oyester sauce: 1tbsp

soya sauce: 1tbsp

black pepper: 1tbsp

salt to taste

sugar 1tsp

vegetable oil 3 tbsp


for cooking:

noodles 200gm

vegetable oil 3tbsp

fresh basil 2-4 leaves

star anise powder 1tsp

black pepper powder 1tsp

bok-choy 6-8 fresh leaves

red bell pepper 1nos(cut into juliennes)

garlic 1tsp

ginger 1/2tsp

spring onion: 4nos(finely sliced)

salt to taste

red chillies 2nos(finely chopped)

sugar: 1tsp


METHODS:


    1.                 Marinate the chicken with 1 tsp soya sauce, oyster sauce, salt, pepper, 1 tsp sugar and 1 tsp sesame oil for 25-30 min.

2.                 boil the noodles in hot salty water for 5mins. be cautious, not to overcook it.

3.                 after the chicken has been marinated, for 30 mins, saute them in oil. add pepper, salt and some brown sugar and some chopped red chilli. cook for 5mins on slow fire.

4.                 in the meantime, u can prepare szechuan sauce. or else u can also buy the one available at market.

5.                 Heat oil in a wok, add red bell pepper,bit of garlic & ginger and spring onion and stir fry quickly on a high flame.

6.                 Add Szechwan sauce and toss well.

7.                 now add the noodles and mix well. slow the fire and cook for 1 minute.

8.                 then add the sauted chicken.

9.                 add seasoning, star anise powder, bok-choy, chopped red chillies and basil leaves.

10.            mix well. and serve hot.

as always i had customized it. and here is te one which i had followed. always try to tear the leaves with hand instead of chopping it with knife. because that gives a better flavour. have it hot. and u will see that in no time, the entire noodles diasppear. roll noodles with fork and then place in a bowl. well, i had served in a plate. u can serve in a bowl. and for people who havent got szechuan sauce, u can make it a home, like i had. and everything worked. yummy chinese in some time.............

Salt and pepper prawns with tomato salad



hello friends,

m sad as well as happy and also scared... sad bcoz my colg lyf has almost cum 2 n end. i yearn for those lovely days, which now are jsst memories. happy coz in the free tym wll b able 2 cook more and spend it according to my own wish. and worried becoz the original game of life begins from here. with placements knocking at the door, m trying my level best to keep them out of my mind. to celebrate thi bizzare state of mind i had invited two of my close college pals for lunch the other day. i knew that i would be cooking for them, and will make something different yet savory, but has to be fulfilling.

i decided to go oriental. the menu was.... Salt and pepper prawns with tomato salad,stir fried noodles with chickens(recipe was given before only), and met balls with orange and red chillies. desert was different. i made my version of chocolate truffles with cocoa powder. the food was perfect spicy to complement the cold afternoons.... and we all had a bawl. well, now here m giving you the recipe for the starter.............

Salt and pepper prawns with tomato salad

Ingrediants:
4tbsp cornflour
2tbsp sea salt
20 prawns
2tsp white pepper
Oil
1 red chilli
Lemon wedges

For salad:
4 tomatoes
2 spring onions
1tsp sesame oil
1 red chilli
1 tsp seasalt

Methods:
1. Cut the onions and mash lightly with fork to mash them lightly
2. Add the rest of the ingrediants, toss them, abd keep aside for 5min to set
3. Combine cornflour, salt and pepper in a bowl
4. Add the prawns and dust them to the cornflour mixture. Shake off excess and keep aside a tray, but donot keep for too long.
5. Heat oil in a wok.
6. Fry prawns in batches,for 2mins.
7. Once prawns are well cooked, now add the chilli to the oil.
8. Arrange prawns on the plate and garnish with red chillies and serve with tomato salad.

it turned out to be much better than what i had expected them to be. light, crispy, golden brown. and the salad added that right bit of zing to it.

try it!!!!!!! and m sure that everyone will love it. i had served two prawns with the salad, the quantity to serve depends on you.
