well guys, this was interesting. i have been thinking of making a loaf for long. and at last yesterday, i did it. a loaf with some leftover bananas. it was kind of easy. but also had more ingrediants than the cookies. i was so happy when the loaf puffed up in the oven, and got its shape. but i had not followed the recipe totally from the mag where it was published, in certain steps. 
this loaf is tasty (because i have tasted it before putting up the recipe) as well as healthy for everyone, especially kids. moms can even add some chocolate chips (i have added some, arnd one table spoon) to make it more attractive to their kids. well, here i am giving you the original recipe and after that i will tell u about the changes i made.

ingrediants:

·                     wholewheat flour 3/4 cup

·                     refined flour 3/4 cup

·                     vegetable oil 1 cup

·                     castor sugar 1 cup

·                     vanilla essence 1tsp

          eggs 3nos



·                     large banana 2nos

·                     cinnamon powder 1/2tsp
·                      
·                     mace powder 1/4tsp

·                     baking powder 2tsp

·                     baking soda 1/4tsp

·                     walnut pieces 3tbsp


method:

·                     preheat the oven @180degree for 15mins

·                     grease ur loaf tin with oil/butter.(i had used oil)

·                     now mix both the wholwwheat and the refined flours in a bowl, with the cinnamon-mace powder, baking powder & soda.mix it well and pass it through a sieve.

·                     in another bowl break the eggs and beat it well. keep aside.

·                     now in another vessel mash the bananas properly with ur hand or fork(i had used a fork). now pour in the sugar and the oil. mix well. the beating should give it a proper consistency.

·                     now add the essence and give it a stir.

·                     now pour in half of the flour mixture and half of the beaten egg mixture. beat well. continue stirring till it gets a good consistency

·                     now add the remaining flour and egg and mix well again. (we do it in halves so that it mixes well, and no lumps are formed).

·                     now add the walnut pieces. stir it lightly.

·                     now pour the mixture in the loaf tin. (i had put it in two turns. i have a 6.5" /2" tin. so i had to do it twice.)

·                     now bake it in the oven for 40 minutes @ 180 degrees.

·                     repeat the process if you have a second turn.

well, for this, i had made loads of changes. since i didnt have much of cinnamon and mace powder then, so i had put in a bit of cinnamon, star anise and green cardamom powder. next i had also added a bit of red chilli powder, to add a bit of heat in this sweet mass. well, i had also used a pineapple essence in place of vanilla. the amount of sugar was also reduced. i had also added cashew, raisin also in the mixture. with all these additions & subtractions my loaf was finally baked. and it was pretty good. i had baked it for a bit longer time to get that dark broen colour on the outside.
