Apple & Raisin Muffins

hello people,
 I am back after a long time. life had taken a 360degree turn. i had almost stopped cooking, because i had kinda lost inspiration. and people like me who like to cook, and keeps experimenting often needs inspiration. was pretty upset due to some personal problems, which had left me completly numb. but thanks to God, for making friends. and for bestowing me with such great friends, who has been beside me during this hard time.

i would also like to talk about the person who has walked out of my life. i might have done wrong stuff, but at the same time i had also put in various other things into this relationship. and i still continue to love you. u left me, so u have kinda lost the oppertunity to taste some great food. Here goes the recipe for some mouth watering muffins, which is not only yumm, healthy too. here goes the recipe for this:

INGREDIANTS:


  • Apple....................................................... 2 nos
  • Eggs......................................................... 2 nos
  • Self- raising flour....................................... 2oogm
  • Baking powder......................................... 1tsp
  • Cinnamon powder.................................... 1tsp
  • Whole wheat flour..................................... 50gm
  • Caster sugar.............................................. 120gm
  • Semi skimmed milk.................................... 135ml
  • Sunflower oil.............................................. 4tbsp
  • Raisins....................................................... 100gm
  • Vanilla extract............................................ 1tsp


METHOD:




  • Preheat oven to 180degree C.
  • Chop/grate the apples. and soak the raisins in water.
  • In a bowl mix together the self raising & whole-wheat flour, baking powder, cinnamon powder & the caster sugar.
  • In another bowl mix together the eggs, milk & the sunflower oil & vanilla. Mix well.
  • Pour in the wet ingrediants into the dry & mix well.
  • Then stir in the grated apples & the raisins. Mix well, incorporating the fruits into the previous mixture.
  • Line the moulds with paper cups, and divide the mixture between 12-16 muffins, depending on the size.
  • Bake for 25 mins. Then cool in wire racks for 10mins.
  • Ready to store or eat warm.


Well, the original recipe said 125ml milk, but i had to add 10ml more, if u feel you can manage with 125ml, bingo!!!! I had grated one apple and has chopped the other one, so as to add some bite size chunks into my muffin. I had used two beautiful red apples, but you can also replace with green apples. I am sure you will enjoy d tang & the crunch. I had also added a bit of brown sugar, along with the caster sugar. Remember, muffins should always be a bit undone.
