EGGLESS VANILLA BUTTER COOKIES

Hi friends,

Let's start by praying for the well being of the nation and our earth as a whole! The only precaution suggested by experts to get rid of the curse on mankind ( read The virus) is to stay indoors and stop Corona from making it's presence felt anymore!

However, the scarcity of essentials leads us to the grocery stores or super markets or wherever. Food as I always say is no luxury, rather a necessity. So on my part, I thought of sharing with you all an easy breezy recipe for cookies, that you can bake along with your whole family. Trust me, it's going to be a memorable experience.

The crux of lock-down has many more things to express beside our self protection. It leads us to thinking about the time when family was enjoyed the most importance , followed by friend and money and all the rest. Nature is acting as a strict parent now, so we better be good kids and adhere to these values. If not now, then when? Let's have a look at the ingredients and then the super easy process as mentioned !!

1.Whisk together 110 gm unsalted butter (at room temperature) + 75 gm caster sugar with an electric beater till well combined. The mixture would increase in volume and will turn paler in colour.

2. Time to add 150 gm flour (sieved) into the beaten butter. whisk well. I used my hands at this stage for it to come together. Do not be alarmed, this is going to be a very sticky dough.

3. Double line your cling film on the work surface. Take out the dough from your mixing bowl and place on the cling film.
4. Form it into a cylindrical shape and wrap tightly with the cling film, twisting both ends to make them even. Keep it in the fridge for an hour, or till the dough hardens.

6. Preheat your convection mode to 175 C. Line your baking tray with parchment.
7. Take the hard dough out of the fridge and slice them into coins of width measuring 1/2".

8. Place them on the baking tray and bake for 30 mins, till the edges have browned  bit and the cookie has hardened.

9. Once out of the oven, cool them for 15-20 mins.
10. Serve them warm with tea or store them away in a tight lid glass bottle.

If you ask me, this can be a good recipe for you to try out with your kids in this lock-down period. Not only do you engage them in some fun activity, but also instill the spirit of discipline & respect in to their system. Kids learn to respect edibles, when they get to make them themselves. Here are a few tips to make them interesting:

a. Top them with jam of your choice for their evening treat.
b. One can also bride them by making these butter cookies into chocolate sandwiches. Spoon some room temperature ganache on top of a cookie. top it with another buttery disc. Easy, effective & filling for snacking and healthy as well.
c. In case you have a nose and taste bud for citrus-y goodness, grate in some zest into the batter along with flour.
d. Add in 1 tbsp of flour (approx), if dough turns out to be too sticky. Do not over knead the dough.
e. If you are the kind, who isn't a big fan of teeth clenching sweetness, feel free to replace caster sugar with brown sugar
f. Even adults would love these small treats or can indulge in these butter-y goodness, just as they are!

So now you are covered, for your evening snacking and day time munchies. Oops!! I forgot to mention your morning tea, and the idea of edible gift. This is sure to win hearts my friends, anytime, anywhere.
